As a traditional folk dish in Anhui Province, smelly mandarin fish is popular in Shexian County, Xiuning County, Yixian County and Jixi County. It is said that in the Qing Dynasty (1644-1911), Huizhou merchants started to marinate fish with various condiments like salt, wine and sauce for its long-distance transportation and preservation, and later smelly mandarin fish was gradually developed. The dish smells rotten, but tastes delicious.
