As a typical course of Hui cuisine, Li Hongzhang Assorted Dish is a traditional famous dish in Hefei City, Anhui Province. The dish was created in 1896 and is said to be related to Li Hongzhang (1823-1901), a top official of the late Qing Dynasty. The dish is cooked with chicken as the main ingredient together with others like sea cucumber, fish maw and squid. As a combination of various ingredients with many flavors, the dish tastes mellow and not greasy, salty and fresh. In September 2018, it was listed as one of Anhui top 10 classic dishes of Chinese Cuisine.
